"A TOUCH OF CLASS IN A GLASS"

Our wines come from the Opstal Estate in the Slanghoek Valley
near the Goudini Spa. The wine maker at this estate is Stanley Louw.

Our wines are certified by the Wine and Spirit Board, and this can
be seen on the "bus ticket" on the neck of the bottle which
guarantees that what is indicated on the label is what you enjoy
in the bottle. For example: Chenin Blanc/ Semillion Semi Sweet
Wine. This means that the only two cultivars are those shown on
the label. There is no other cultivar like Haneport, etc in the bottle.

The method of creating white wine is by blending grape
concentrate into the wines which raises the sugar levels to be
able to classify the wine as semi sweet. It is therefore possible to
have two blends of the same cultivars, one being dry and the
other semi sweet.

For Cattle Barons we have differentiated the dry white from the
semi sweet white by the colours of the label as well as the clear
wording of "Dry White Wine" and "Semi Sweet Wine" on each of
them.

The red wine in the bottle is a blend of Cabernet Sauvignon and
Shiraz, an easy drinking Dry Red Wine.

The Estate is situated in the heart of the mountainous and picturesque Slanghoek valley. This
valley forms a small part of the big Breede River Valley, with Worcester as the biggest town.

This Estate has been in our family since 1847 and through my great grandmother, I am the
sixth generation descendant of JC Rossouw, the first owner of "De Opstal bij de Fonteine".
Growing wine grapes and the making of wine really became a specialized art when my
grandfather, Carl Everson, decided to modernize our winery instead of joining a local Co-op
winery like most of the other farmers.

Now, with South African wines being accepted all over the world, we have entered the export
market with the cream of our crop. Currently our biggest export is the Netherlands , Germany
and the UK . Because of an ongoing replanting program of quality varieties, our Estate is now
ready to expand to smaller high quality consumers.

The Estate Winery was completely modernized in the late seventies and with recent imports of
the best winery equipment we are in an extremely fortunate position to compliment the
quality of our grapes.

In 2004 Opstal underwent big changes and Opstal Restaurant was opened. Our Estate and its
people are well known for their hospitality and friendliness.
